Egg converter
Convert a recipe’s eggs to grams or cups, swap egg sizes, or work out how many eggs make a weight.
That's 2× as much as a large egg, while a sponge cake’s eggs is 2× more.
What it means
How much egg is that?
Weights without shell. US and EU sizes differ slightly (US large is 50 g in the shell-less sense here; EU large is 63–73 g in the shell).

Three things worth knowing
-
50 g a large egg
White ≈ 30 g, yolk ≈ 18 g. Four medium eggs replace about three and a half large.
-
Graded by weight
Egg sizes are set by the weight of a dozen in the US (large: 24 oz a dozen, shell on) and of each egg in the EU.
-
Halving an egg
To halve a recipe with one egg, beat it and weigh out 25 g.

About eggs in recipes
Most recipes assume large eggs: about 50 g without the shell, of which 30 g is white and 18 g yolk. Weighing is more accurate than counting, especially when you scale a recipe.
A cup of beaten egg is about 243 g, roughly five large eggs.
